Coconut Milk Laksa

Here's a comforting recipe that takes minutes to make - perfect for those days you don't have the energy for cooking something complicated or are squeezed for time. Coconut milk contains medium-chain saturated fatty acids, and is well known for it's cold-busting properties. Add in ground turmeric, black pepper and some grated fresh ginger for an extra boost of anti-inflammatory compounds.
You can switch up the veg, depending on what you have to hand (think carrots, pumpkin, sweet potatoes...).
I often roast a while tray of butternut squash and courgettes to keep in the fridge then use throughout a week. Adding pre-roasted veg to this meal cuts down the cooking time to 10minutes - so perfect for when you're feeling tired or short on time!
